Attendees will gain an understanding on why Chefs produce specialized foods.  The goal is for attendees to gain an increased comfort level in assessing risk/critical control points with known and unknown food products. This is not a training a HACCP training and attendees need to have a good understanding of the HACCP principles.

Industry panel: Presentations by Chef from Bin 707, Chef Instructor from WCCC, and local chef focused on canning/acidification. Panel discussion with attendees following presentations.
