Attendees will gain an understanding on why Chefs produce specialized foods. The goal is for attendees to gain an increased comfort level in assessing risk/critical control points with known and unknown food products. This is not a training a HACCP training and attendees need to have a good understanding of the HACCP principles.
Agenda:
9:30 – 10:00 Introductions and discussion on what brought people to the class 10:00 -12:00 Industry panel: Presentations by Chef from Bin 707, Chef Instructor from WCCC, and local chef focused on canning/acidification. Panel discussion with attendees following presentations. Noon -12:45 Lunch provided 12:45 to 2:00 Regulatory and Problem Solving interactive presentation by Matt Brandt, CDPHE 2:00 – 2:15 Break 2:15 - 3:00 Regulatory and Problem Solving continued 3:00 – 3:30 Wrap up discussion, what were the ah ha’s and take ways
